Cooking goodness!

These past couple days I've been cooking up some greatness. Whenever D is home I love to make him some filling, delicious dinners. The rest of the week, when he's working, is more low key because its just me and the kids.
Tonight I made pumpkin and sage stuffed shells with a white cheese sauce!! I got the recipe off Craftster. NOM NOM!

The filling was PHENOMENAL!! The pumpkin was set off by the earthyness of the sage and the slight trace of nutmeg, I also added a touch of nutmeg to the white sauce. This recipe is a keeper. Everyone loved it! I served it up with a simple spinach salad to balance the richness of the shells.

Next up was Tiramisu for dessert! I had to improvise a bit because we couldn't find lady fingers anywhere and we don't keep alcohol in the house. SO, I used angel food cake in palce of the ady fingers and run extract in place of rum (which I now realize was pointless because extract is made with alcohol). Mmmmm... this was divine. The creamy custard, the boozy coffee soaked angel food, the rich whipped cream.... seriously freakin' delish. And pretty easy, too!!!

Tuesday night I made empanadas. They turned out ok. But, the dough was not worth all the extra effort. And some pretty spiffy guacamole. I adore avocados. I could seriously eat them all day, every day!

Oh, and this is a bit late but I baked this awesome chocolate Guinness cake for St. Pat's day @ my mom's. It was frosted with a cream cheese icing after it cooled.
