Overflowing and then some...

Last night me and D made a fabulous dinner inspired by the Food network chef, Tyler Florence. He is fantastic!!! He is an amazing cook with a passion for simple, scrumptious food. His book "Tyler's Ultimate" definitely showcases that. We picked a main and a dessert from that lovely book. I was first swayed by the crab cakes. MMMMMMM crrrraaaab. But, I guess we're too far in boonies here to carry lump crab. oh, pooh! So.... we chose to go with a scallop dish. Never cooked with them before. We wrapped those suckers in prosciutto, sliced some apples and pan fried the lot in sage infised butter. Completely and utterly drool worthy!!! THEN... my dear friends, for the feast does not end there.... I whipped up a batch of chocolate mousse!!!! O M G.... soooo rich... sooo decadent... soooo light.... soooo creamy!!! You get the point, yes? :) I whipped up some cream with a bit of sugar and a tad of pure vanilla extract, chopped some semi sweet chocolate for the top and.... Voila! Pure love and magic contained in a glass. It was actually a bit too rich to finish all at once. My 5 yr old's eyes were bigger than his tummy. He only got about 1/3 of the way through it. I about 3/4 way through. My hubby scarfed his, though. We did however come back to finish them off later that night while watching (FINALLY!!!) Coraline. Somehow even though I've eaten an incredibly rich meal, I end up hungry a few hours later. This baby making business is bonky. lol On to the pictures!!!!
